January's Favorite Recipe
Let's talk about dates! The fruit, not the excursion. I don't even know what people do on dates anymore, but I do know an awful lot about the fruit! Dates are natures candy and I can't believe it's taken me 27 years to discover their deliciousness. Not only are they delicious, but they're also incredibly nutritious. Here are some of the health benefits I've discovered on the interwebz:
Honestly, the best part of these muffins is that you can mix everything in the food processor and don't even have to get a bowl dirty. Pretty great if you ask me.

If that's not enough to get you on the date train, I don't know what is. I found a banana date muffin recipe on pinterest and figured I'd give it a go. You can find the original recipe here.
These are great because they are dairy free, gluten free and refined sugar free; BUT YOU WOULD NEVER KNOW. I sprinkled dark chocolate on a few muffins for myself, but left them off of Kenneth's muffins. They were moist, delicious and Kenneth approved. We had a picnic lunch on the kitchen floor. (That's my cutesie way of saying I didn't want to clean off the highchair tray from breakfast.) I made a smoothie to go with our muffins and I was pleasantly surprised with how that turned out. I'm not a big smoothie person - something about the texture grosses me out. I kind of just threw together some pineapple, strawberries, avocado, spinach, coconut milk and raw local honey. I put a straw in Kenneth's cup but she wanted nothing to do with it and preferred drinking out of the open glass.
